For the past 20 years, Chef Ettore has built strong relationships with many growers, but none compare to the partnership with Kimball Fruit Farm and its owner, David. Season after season, David delivers consistently flavorful heirloom tomatoes, offering a stunning variety of flavors, textures, and colors. As a chef, I'm grateful for such exceptional ingredients that allow me to express my passion and creativity.

A variety of heirloom Tomatoes, scallop Crudo, basil and buttermilk spuma 

 

Caprese

 Pink Berkeley Tie Die Tomato, burrata, sour dough crostini and pesto
 

Spaghetti al Pomodoro

Oven dried Bronze Torch sauce, speck, crispy egg yolk, sheep's milk fresh ricotta 
 

Guine Hen

Smoked speckled roman tomato mousse, basil celery root puree, parmesan crumble

 

Panna Cotta

Gold Metal Tomato, vanilla and gooseberry panna cotta, and EVOO cake crumbs
