For the past 20 years, Chef Ettore has built strong relationships with many growers, but none compare to the partnership with Kimball Fruit Farm and its owner, David. Season after season, David delivers consistently flavorful heirloom tomatoes, offering a stunning variety of flavors, textures, and colors. As a chef, I'm grateful for such exceptional ingredients that allow me to express my passion and creativity.

Breaded Green Zebra tomatoes, bufala mozzarella and pesto

Stuffed pasta with duck confit and ricotta, smoked Speckled Roman Tomato sauce,

caramelized pearl onions, parm crisp  

 

Panna Cotta

Gold Metal Tomato, vanilla and gooseberry panna cotta, and EVOO cake
